Italian Roasted Peppers With Seasoned Breadcrumbs
Real easy Italian side dish that is packed full of flavor from the garlic, cheese, and breadcrumb mixture.

- 3-4 large bell peppers
- 3 cloves garlic
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmigiano-Reggiano
- 6 Tbsp olive oil
- 1/2 tsp kosher salt
- 1/2 tsp dried oregano
- 1/8 tsp red pepper flakes
Heat oven to 450 degrees
Cut bell peppers in half, removing the seeds and pith and arrange in oven safe dish or roasting pan. Drizzle 2 Tablespoons of olive oil onto peppers. Place peppers in oven and set timer for 20 minutes.
While peppers are roasting, grate 1/2 cup of Parmigiano-Reggiano.
Mince 3 cloves of garlic.
Add cheese and garlic to a mixing bowl along with 1/2 cup breadcrumbs, 1/2 tsp kosher salt, 1/2 tsp oregano, 1/8 tsp pepper flakes, and 2 Tbsp of olive oil. Mix it all up.
Remove peppers from oven when timer goes off. Add seasoned breadcrumbs to each pepper. Drizzle remaining 2 Tbsp of olive oil on to each pepper.
Return peppers to oven and set timer for an additional 15 minutes. When timer goes off they are finished. Enjoy!
Use any color pepper you like, though I think red taste the best.
The red pepper flakes are completely optional.
