One-Pan Sausage and Peppers Orzo

My easy One-Pan Sausage and Peppers with Orzo includes sausage, peppers, onions, plus a hint of tomato combined with orzo and finished with fresh basil, makes this dish one you'll make on repeat.

Ingredients

  • 1 1/4 pounds Italian sausage
  • 1/3 cup extra virgin olive oil
  • 1 large red bell pepper chopped
  • 1 large green bell pepper chopped
  • 1 medium onion chopped
  • 1/2 cup water
  • 10 cloves garlic chopped
  • 1/3 cup tomato paste
  • 4 cups low-sodium chicken stock
  • 2 teaspoons Diamond crystal kosher salt
  • 2 teaspoons fennel seeds
  • 1 tablespoon dried Sicilian oregano or dried Italian oregano
  • salt and pepper to taste
  • 1 pound orzo pasta
  • 1/4 cup basil leaves hand torn

Instructions

  • Heat a large pot or pan to medium heat and add the sausage links. Cook the sausage until browned on all sides then place the links on a cutting board to cool. Once they are cool enough to handle, slice into bite-sized pieces and place on a plate and tent with foil.
  • Add the olive oil, onions, peppers, and a pinch of salt to the pan along with a 1/2 cup of water. Turn heat to high, cover with a tight fitting lid, and steam for 5 minutes. Remove the lid, turn the heat to medium, and saute for 5 minutes or until the water has evaporated. Add the garlic and cook for another 2-3 minutes or until golden. Add the tomato paste and cook for 5 minutes. If the paste starts to burn, add a splash of water.
  • Add the sliced sausage and fennel seeds and cook for 3 minutes while stirring to combine. Add the chicken stock, salt, oregano, and orzo. Mix to coat and bring to a boil. Boil for 2 minutes then cover with a tight fittting lid and turn the heat to low. Let cook over low for 12-15 minutes or until the orzo is tender.
  • If the orzo is too dry add a touch more chicken stock and olive oil if needed. Taste test and adjust salt and pepper if required. Garnish with the basil leaves and serve with grated parmesan or pecorino cheese. Enjoy!

Notes

  • Sausage.  Any type of Italian sausage can be used.  
  • Tomato.  You can increase the amount of tomato by adding more paste or 1 cup of tomato sauce.  If adding tomato sauce, reduce the chicken stock by 1 cup.
  • Cheese. Serve with grated Parmigiano Reggiano or Pecorino Romano cheese.
  • Leftovers.  One-pan sausage and peppers orzo can be saved for up to 3 days and can be reheated in the microwave.
