Green Beans Almondine With Feta
Green Beans Almondine is super easy and the addition of lemon and feta elevates the flavor in a major way. This low-effort side is perfect with any main course!

- 2 pounds (908g) green beans
- 1/2 cup (65g) slivered almonds
- 3 tablespoons (42g) unsalted butter
- salt and pepper to taste
- 1 1/4 cups (300ml) water divided
- 2 tablespoons (30ml) fresh lemon juice plus more to taste
- 2 teaspoons lemon zest
- 1/2 cup (120g) feta for serving
In a lidded pot, bring 1 cup of water to boil then steam the beans for 2-3 minutes or until bright green. Drain the beans and run under cold water until they are cooled off.
Heat a pan to medium heat with the butter and almonds. Saute until browned but not burnt, lowering the heat if needed.
Add the remaining 1/4 cup of water and the lemon juice to the pan and combine with a wooden spoon to form the sauce.
Add the green beans to the pan and thouroughly coat in the sauce. Once the beans are warm and tender to your liking, turn off the heat and season with salt and pepper to taste.
Plate the green beans and top with lemon zest. Serve with the feta. Enjoy!
- Steaming. The beans only need to be steamed for a few minutes and should be run under cold water to mostly stop the cooking process.
- Feta. If you don't like feta cheese, simply omit.
- Leftovers. Green beans almondine can be saved in the fridge for up to 3 days and can be reheated in the microwave or on the stovetop.
