My Smothered Pork Chops combine tender pork chops that are seared until golden and finished in a creamy garlic sauce with mushrooms and fresh parsley. This dish is special enough for gatherings, but simple enough for weeknights.

Smothered Chops?
Smothered, when used in the culinary world, typically refers to a dish where the main ingredient is heavily coated in a rich gravy; there’s no better way to describe this dish.
My smothered pork chops are pan-seared and then smothered in a rich brown mushroom gravy that’s out-of-this-world delicious and incredibly easy. This dish is ready in just under an hour so it’s perfect for weeknights.
Though this is a southern recipe, I usually serve this dish with egg noodles or homemade spaetzle, mashed potatoes, and sauteed green beans. A loaf of crusty bread wouldn’t hurt either.
Recipe Ingredients
All ingredients for this recipe are shown in the pic below and special notes are made in this bulleted list to assist you.

- Pork. I’m using bone-in pork loin chops but you can also use rib chops, or boneless loin chops. If you’re looking for a pork tenderloin recipe, consider trying my creamy pork tenderloin with tangy mushroom sauce recipe.
- Mushrooms. Cremini mushrooms are my go-to for smothered pork chops, but you can use white button mushrooms, or any combination of mushrooms you’d like.
- Stock. Use a store-bought low-sodium chicken stock, or homemade chicken stock.
- Cream. I’m using heavy cream to make this sauce creamy. I do recommend using cream rather than milk, as milk may break in the sauce.
- Spice. I love to finish my smothered pork chops with a pinch of cayenne or either homemade Cajun seasoning or a store-bought brand like Slap Ya Mama.

How to make it
Each number corresponds to the numbered written steps below.
- Pat the chops dry and season well with the salt, pepper, and garlic powder on all sides. If time permits, you can place them in the fridge uncovered the night before. If not, no worries. Just move to step 2.
- Dredge the chops in flour and shake off the excess, reserve the leftover flour for later in the recipe. Heat a large pan to medium heat with the olive oil and sear the pork chops for 3-4 minutes per side.

- Once the chops are well browned on both sides, transfer them to a plate and cover with tented foil.
- Add the mushrooms to the pan and cook until they release their water and start to brown.
- Season with salt and pepper, then transfer to the same plate as the chops.
- Add the butter to the pan along with the onions and a pinch of salt. Once the onions start to brown, add the garlic and cook until fragrant.

- Add 1/4 cup of the remaining flour and cook until the flour turns golden, about 2 mintues.
- Add the chicken stock, Worcestershire sauce, and cayenne pepper and turn the heat to high. Scrape the bottom of the pan with a wooden spoon to dislodge any brown bits. Once boiling, reduce the heat to a simmer.
- Add the cream and mix to combine.

- Add the chops and mushrooms back to the pan and simmer for 5 minutes or until the chops are warmed through, then remove the pan from the heat, taste test, and adjust seasoning as needed. Add the parsley and serve.
Top tip
- My number 1 tip for smothered pork chops is to salt the chops overnight. Salting them and setting them in the fridge uncovered allows the surface of the chops to dry out, which yields a better sear and tender, juicier chops. If you don’t have time to do this, don’t worry – the chops will still be great, but this trick will make them all the better.
- If you have thick chops, use your tongs and hold the pork chops upright to sear the fat sides of the chops.

Smothered Pork Chops with Brown Mushroom Gravy

Ingredients
- 4 bone-in pork chops loin or rib chops
- salt and pepper to taste
- 1 teaspoon garlic powder
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 4 tablespoons unsalted butter
- 1 pound cremini mushrooms sliced
- 1 large onion sliced
- 5 cloves garlic minced
- 2 1/2 cups low-sodium chicken stock
- 1 tablespoon worcestershire sauce
- 1 pinch cayenne pepper optional, see notes below
- 1/4 cup heavy cream
- 3 tablespoons minced flat-leaf Italian parsley

Instructions

- Add the butter to the pan along with the onions and a pinch of salt. Once the onions start to brown, add the garlic and cook until fragrant. Add a 1/4 cup of remaining flour and cook until the flour turns golden (about 2 minutes).
- Add the chicken stock, worcestershire sauce, and cayenne pepper and turn the heat to high. Scrape the bottom of the pan with a wooden spoon to dislodge any brown bits. Once boiling, turn the heat down to a simmer.
- Add the cream and mix to combine. Return the pork chops and mushrooms to the pan and simmer for 5 minutes or until the chops are warmed through. Remove the pan from the heat and taste test the sauce, seasoning with more salt and pepper as required. Mix in the parsley and serve over rice. Enjoy!
Notes
- Pork Chops. Loin and rib chops both work great for this recipe. You can use boneless loin chops too.
- Salt the chops overnight. For juicier pork chops, salt at 1% of weight and place on a wire rack, uncovered, in the fridge the night before. For example; If you have 2 pounds of chops you would use 1 tbsp of Diamond Crystal kosher salt. If you don’t have time, simply season the chops and dredge in flour as written in step 1.
- Spices. I like to use a pinch of cayenne or slap ya mamma cajun seasoning. I recommend adding it at the end after taste testing the sauce.
- Serve with. This dish is great over rice, mashed potatoes, or egg noodles.
- Leftovers. Smothered pork chops can be saved in the fridge for up to 3 days and can be reheated on the stovetop or microwave.
