The unmistakable combination of chicken, bacon, hard-boiled egg, avocado, tomatoes, and blue cheese makes the Cobb Salad one of the most recognizable and iconic salads to exist. The flavors are fantastic, and this salad is hearty and satiating enough to be a complete meal.

Best Salad Ever

I’m the first to admit that while I enjoy salads, I don’t usually view them as a full meal. I typically eat them before a meal, or at the very end of the meal, but rarely as the meal itself.

But the Cobb Salad is truly an exception, and one I admit to regularly eating as a full meal.

Invented in the 1930s at The Brown Derby restaurant in Hollywood by combining a bunch of leftover ingredients, this salad is comprised of calorically dense ingredients: chicken, eggs, blue cheese, avocado, and bacon, while the lighter ingredients, tomatoes and lettuce, balance it out, yielding a satisfying and truly delicious meal that stands on its own.

And while many would rather order a Cobb salad at a restaurant than make it in their own home, similar to my homemade Chicken Caesar Salad, this one is infinitely better when made at home!

Recipe Ingredients

All ingredients for this recipe are shown in the pic below and special notes are made in this bulleted list to assist you.

Ingredients shown: endive, eggs, avocados, lettuce, tomatoes, chives, blue cheese, olive oil, vinegar, dijon mustard, garlic, bacon, and chicken breasts.
  • Chicken. I’m using chicken breasts that I poach, similar to how I do them for my New York deli chicken salad recipe. You could definitely use pulled rotisserie chicken, sliced Italian chicken cutlets, or leftover Thanksgiving turkey breast as well.
  • Bacon. Any bacon, thick-cut or otherwise, will do. Feel free to take a shortcut and buy precooked bacon from the store.
  • Eggs. Either hardboil the eggs yourself, or buy the ones from the grocery store.
  • Lettuces. I’m using a combination of iceberg lettuce and endive. Feel free to use other lettuces, such as bib or romaine.
  • Blue cheese. Roquefort or other blue cheeses, such as gorgonzola, are typically used for the Cobb Salad.
  • Avocado. Look for avocados that are slightly soft, but still firm.
  • Dressing. I’m using a combination of lemon juice, red wine vinegar, garlic, Dijon mustard, olive oil, and neutral oil for the salad dressing. Another option is to use homemade balsamic vinaigrette.

How to make it

Each number corresponds to the numbered written steps below.

  1. Combine the lemon juice, vinegar, garlic, and mustard in a food processor, then slowly drizzle the oils and blend until emulsified. You can also hand whisk or use a wide-mouth mason jar and immersion blender as shown below.
  2. Taste test and season with salt and pepper as needed.

  1. Heat a large pot with enough salted water to submerge the chicken breasts by at least 3 inches of water. Once boiling, add the chicken, cover, return to a boil, and once boiling, remove the pot from the heat and set aside, keeping it covered for at least 20 minutes.
  2. Remove the chicken from the pot and chop into chunks. You can either cool the chicken, or you can add it warm to the salad later on.
  3. Cook the bacon in a pan over medium heat until crisp, then place on a paper towel-lined plate to drain and break up the bacon pieces. In a large bowl, toss the iceberg lettuce and endive with half of the dressing and season with salt and pepper to taste.

  1. Transfer the lettuce mixture to a large bowl or platter and arrange the tomatoes, eggs, blue cheese, bacon, chicken, and avocado in rows on top of the greens. Top with the chives and drizzle more dressing on top, and serve with dressing on the side as well.

Top tip

As much as I love making everything in this recipe from scratch, I’m realistic in that I know some nights are harder than others to get a meal on the table so I encourage you to take shortcuts if needed. It truly is ok to use store-bought hard-boiled eggs, precooked bacon, rotisserie chicken, precrumbled blue cheese, etc. if you’re tight on time.

The iconic Cobb Salad combines chicken breast, crispy bacon, avocado, hard boiled eggs, tomatoes, and blue cheese with lettuce and the most delicious homemade vinaigrette. This hearty salad is a meal unto itself!

Ingredients 

For the dressing

  • 2 tablespoons lemon juice
  • 1/3 cup red wine vinegar
  • 1 clove garlic grated
  • 1 tablespoon Dijon mustard
  • 1/3 cup olive oil
  • 1/3 cup neutral oil vegetable, canola, avocado, etc
  • salt and pepper to taste

For the salad

  • 1 pound boneless skinless chicken breasts can also use precooked roasted chicken or rotisserie chicken
  • 1/2 pound bacon
  • 1 head iceberg lettuce outer leaves removed and roughly chopped
  • 1 head endive roughly chopped
  • 3/4 pound cherry tomatoes halved
  • 4 hard boiled eggs chopped or halved
  • 1 cup crumbled blue cheese
  • 3 tablespoons minced chives
  • salt and pepper to taste

Instructions 

For the dressing

  • Combine all of the dressing ingredients in a food processor except for the oil. Turn the processor on and slowly drizzle the oil through the top and blend until emulsified. Taste test and season the dressing with salt and pepper to taste. Note: The dressing can be hand whisked or can also be prepared in a wide-mouthed mason jar with an immersion blender.

For the salad

  • Heat a large pot of salted water so that the chicken breasts will be submerged by at least 3 inches of water.
  • Once boiling, add the chicken breasts and cover. Bring back to a boil and once it comes back to a boil, remove the pot from the heat and set aside, remaining covered, for at least 20 minutes.
  • Remove the chicken from the pot and chop into chunks. The chicken can be added to the salad warm or can be cooled before moving on to the salad.
  • Cook the bacon in a pan over medium heat until crisp, then place the bacon on a paper towel lined plate to drain. Break the cooked bacon into pieces and set aside.
  • Add the iceberg and endive into a mixing bowl. Add half of the dressing and toss to coat. Season with salt and pepper to taste, then place the greens into a large salad bowl or platter.
  • Arrange the tomatoes, hardboiled eggs, blue cheese, avocado, bacon, and chicken in rows on top of the salad greens. Top with the chives. Drizzle a bit more of the dressing on top of the salad and serve with the remaining dressing on the side. Enjoy!

Notes

  • Servings. Makes 4 large dinner-sized portions or ~6 side salad portions.
  • Chicken.  If you prefer not to poach chicken, you can use precooked chicken cutlets, roasted chicken, or rotisserie chicken instead.
  • Poaching the chicken.  Follow the process outlined above and you will have perfectly poached chicken.  You can check the internal temperature after letting the chicken sit in the pot for 20 minutes.  If it isn’t 160°F when checked with and instant read thermometer, place the chicken back in the pot covered for another 20 minutes then check again.
  • Dressing. If the dressing is too thick add a couple of teaspoons of water to thin.  If too thin, add a bit more olive oil and blend once more.
  • Calories. Calorie info reflects using half of the dressing.  You will most likely not need all of it.
  • Leftovers.  Leftovers can be saved for 3 days in the fridge.  If you want leftovers, don’t dress the salad portion you plan on storing.
