Busy nights call for easy dinners like my Sausage and Chickpea Pasta. Ready in under an hour, this hearty dish combines sliced Italian sausage and chickpeas with al dente pasta in a garlicky tomato sauce, finished with fresh basil and parsley.

Hearty but easy
When I hear the word hearty as a description for food, I usually think of something that takes hours to make, but my Chickpea and Sausage Pasta with tomatoes is proof that hearty doesn’t need to take a long time.
This easy meal is one I turn to often on weeknights when I need something quick. The addition of sausage makes this dish a bit more filling than my pasta e ceci, but every bit as delicious.
To lighten things up, I usually serve this with my Italian broccoli salad or a side of garlic sautéed spinach.
Recipe Ingredients
All ingredients for this recipe are shown in the pic below and special notes are made in this bulleted list to assist you.

- Sausage. I’m using sweet Italian sausage links that I roast and slice. You can also use hot Italian sausage. If you prefer crumbled sausage, use bulk sausage and sauté in the pan (similar to how I do for my sausage cherry tomato pasta).
- Beans. I’m using canned chickpeas, but cannellini or navy beans would also work well. I use cannellini beans in my braised ribs and Italian sausage with beans, and that combination is delicious.
- Pasta. Mezzi rigatoni is my go-to for this sausage chickpea pasta, but any tubular pasta, such as rigatoni or penne, would work.
- Tomatoes. I’m starting with canned whole plum tomatoes and then crushing them by hand. You could also use canned crushed tomatoes to make it even easier.
- Anchovy. I love the depth of flavor anchovy fillets add to this dish. Use canned or jarred fillets. You can also use anchovy paste if preferred. Use as much or as little anchovies as you’d like – they’re optional.

How to make sausage and chickpea pasta
Each number corresponds to the numbered written steps below.
- Place the sausage links in a baking dish and poke a few holes in each, then roast in a 400°F oven for 15 minutes. Allow the links to cool, then slice on a bias.
- Bring a large pot of salted water to a boil. Heat a large pan over medium heat for 2 minutes, then coat the pan with olive oil and add the sausage. Cook until browned on both sides and fully cooked through. Note: If using bulk sausage, sear the sausage and break it up with a wooden spoon. Transfer the sausage to a plate and cover with tented foil.

- If the pan is dry, add a few more tablespoons of olive oil and add the garlic and anchovies. Sauté until lightly golden, then add the crushed red pepper and cook for 30 seconds.
- Add the tomatoes and bring to a lively simmer.
- Add the chickpeas and sausage and continue to cook at a moderate simmer. Cook the pasta in the boiling water until 1 minute less than al dente.
- Add the pasta to the sauce and stir or flip to coat. If the pasta is dry, add 1/2 cup of reserved pasta water.

- Cook for 30-60 seconds, then remove from the heat and add the grated cheese.
- Taste test and adjust salt and pepper as needed, then finish with the parsley and basil and serve with more cheese.
Top tips
- Save your pasta water. Be sure to reserve your pasta water. I almost always need to add a little bit of pasta water to any dish to reconstitute it, especially if you’re waiting for friends or family to come to the table.
- Customize it. Sausage chickpea rigatoni is a pretty rustic and forgiving dish. Feel free to customize the ingredients to suit your tastes. Like more garlic? Add a bunch more. Like things spicy? Add some Calabrian chili paste, cherry peppers, or start with hot Italian sausage. You don’t need my permission to adjust one of my recipes to make it your own – in fact, I encourage it and talk about that in more detail in my cookbook.

Sausage Chickpea Rigatoni

Ingredients
- 1 1/2 pounds Italian sausage
- 1 pound rigatoni or penne, ziti, etc
- 1/4 cup extra virgin olive oil
- 6 cloves garlic sliced
- 3 small anchovy fillets optional
- 1/2 teaspoons crushed hot red pepper flakes
- 1 28-ounce can plum tomatoes hand crushed or blender pulsed
- 2 15-ounce cans chickpeas drained
- 2 cups reserved pasta water will most likely not need all of it
- 1/2 cup grated Parmgiano Reggiano
- 1/4 packed cup basil leaves hand torn
- 1/4 cup minced flat-leaf Italian parsley
- salt and pepper to taste

Instructions
- Line sausage links in a baking dish and poke a couple holes in them. Roast sausage at 400°F for 15 minutes. Once done and cool enough to handle, slice sausage on a bias.
- Bring a large pot of salted water (2 tablespoons per gallon of water) to a boil.
- Heat a large pan to medium heat for 2 minutes. Coat the pan with the olive oil and add in the sliced sausage. Cook the sausage until browned on both sides and cooked through. Note: If using bulk Italian sausage, sear the sausage and break up with a wooden spoon. Remove the sausage to a plate.
- Remove the sausage and set aside in a bowl covered with foil to keep warm. If the pan is dry add in a couple more tablespoons of olive oil. Add the garlic and anchovies and saute until lightly golden then add in the crushed red pepper flakes and cook for 30 seconds more.
- Next, add in the tomatoes and bring to a lively simmer. Add in the chickpeas and sausage and continue to cook at a moderate simmer.
- Now cook the pasta until 1 minute less than al dente. Add the almost cooked pasta into the sauce and stir or flip to coat. If the pasta is too dry add a 1/2 cup of pasta water. Cook for 30-60 seconds until finished then remove pan from the heat and mix in the cheese.
- Taste and season with more salt and pepper if required. Add in the parsley and basil and serve with grated cheese.
Notes
- Servings. Makes 4 large or 6 moderate sized servings.
- Sausage. You can use whole links sliced into pieces or bulk Italian sausage for this recipe.
- Substitute beans. Cannellini or navy beans can be subbed for chickpeas.
- Pasta water. If the pasta dries out at all just add a touch of the reserved pasta water to loosen it up and mix well before serving.
- Leftovers. Sausage and chickpea pasta can be saved for up to 3 days and can be reheated on the stovetop or the microwave.
